Artichoke dip

Summer is on its way! Summer and the festive season involves lots of nibbles, bubbles and treats. It can be easy to overindulge in unhealthy treats. But you can create a healthy platter of snacks, that are healthy, delicious and simple to make.

I love to make different dips or hummus to enjoy with crackers and vegetables. Homemade  dips are super easy to make and far healthier than store bought ones and you know what is going into them. One of my new favourite dips is an artichoke dip

Artichoke hearts
1/4 cup of olive oil
1/2 lemon juiced
1/4 of a cup of cashews
2 cloves of garlic
1 tablespoon of nutritional yeast
Salt and Pepper to taste

Method
1. Drain artichoke hearts.
2. Place all ingredients in a food processor and pulse, scrapping down the sides a few times.
3. Add to a bowl and enjoy.

It keeps in the fridge for about a week.
